Perfect Gluten-Free Pie Crust

2 ¼ c all purpose or gluten-free flour
¼ t salt
1 T sugar
1 c cold butter (2 sticks)
1 egg
2 t cider vinegar
5 T ice water
Directions
- Preheat oven to 350. Butter two pie plates.
- Mix flour, salt, and sugar. Beat egg and add vinegar.
- Cut flour mix into butter with a pastry cutter until pea-sized bits.
- Gradually add egg and vinegar, and mix gently with a pastry cutter. Then add water and mix to form the dough.
- Divide in half and form into two balls with cool hands (run cold water over hands as needed).
- Roll between two pieces of parchment paper until about 2mm thick.
- Place in pie plates and crimp or smooth edges as desired. Bake for 10 minutes before filling.

- *Use Bob’s Red Mill 1 to 1 baking flour, white rice flour, or Kathy’s gluten-free flour mix.
