3 cups all-purpose or gluten-free flour
¼ teaspoon baking powder
¼ teaspoon baking soda
3 tablespoons unsalted butter, softened
½ teaspoon salt
½ package (4 ounces) cream cheese, softened
1 cup sugar
1 large egg
¾ cups mashed ripe bananas (about 2 medium)
½ teaspoon vanilla extract
1 c chopped pecans (optional)
1 cup dried tart cherries (optional)
Orange Glaze
½ c confectioners’ sugar
1 ½ tablespoons orange juice
1 teaspoon grated orange zest
Directions
- Preheat the oven to 350.° Grease the bottom of a glass bread pan or small baking pan.
- Cream the butter, cream cheese, and sugar until light and fluffy with a mixer or food processor.
- In a mixing bowl, combine flour, baking powder, baking soda, and salt. Sift dry ingredients and add gradually to the creamed mixture. Fold in ½ cup of pecans and cherries.
- Transfer the batter to the pan. Sprinkle with remaining pecans. Bake for 1 to 1 ¼ hours (covering with foil if the bread darkens too rapidly) until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to cool on a plate or wire rack.
- While still slightly warm, whisk the glaze ingredients. Drizzle over loaves, using a baking pan or parchment paper to catch the excess. Cool completely.
