Ingredients

  • 3 cups all-purpose or gluten-free flour

  • ¼ teaspoon baking powder

  • ¼ teaspoon baking soda

  • 3 tablespoons unsalted butter, softened

  • ½ teaspoon salt

  • ½ package (4 ounces) cream cheese, softened

  • 1 cup sugar

  • 1 large egg

  • ¾ cups mashed ripe bananas (about 2 medium)

  • ½ teaspoon vanilla extract

  • 1 c chopped pecans (optional)

  • 1 cup dried tart cherries (optional)

  • Orange Glaze

  • ½ c confectioners’ sugar

  • 1 ½ tablespoons orange juice

  • 1 teaspoon grated orange zest

Directions

  • Preheat the oven to 350.° Grease the bottom of a glass bread pan or small baking pan.
  • Cream the butter, cream cheese, and sugar until light and fluffy with a mixer or food processor.
  • In a mixing bowl, combine flour, baking powder, baking soda, and salt. Sift dry ingredients and add gradually to the creamed mixture. Fold in ½ cup of pecans and cherries.
  • Transfer the batter to the pan. Sprinkle with remaining pecans. Bake for 1 to 1 ¼ hours (covering with foil if the bread darkens too rapidly) until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to cool on a plate or wire rack.
  • While still slightly warm, whisk the glaze ingredients. Drizzle over loaves, using a baking pan or parchment paper to catch the excess. Cool completely.

  • *Use Bob’s Red Mill 1 to 1 baking flour, white rice flour, or Kathy’s gluten-free flour mix.
