Ingredients

  • 2 1⁄4 cups all-purpose or gluten-free flour

  • 2 tablespoons granulated sugar

  • 2 teaspoons baking powder

  • 1⁄2 teaspoon baking soda

  • 1⁄4 teaspoon chili powder (optional)

  • 1⁄2 teaspoon salt

  • 1⁄2 cup cold butter, cubed

  • 1 cup sharp or medium cheddar cheese, shredded

  • 1 cup milk (or 1⁄2 cup milk 1⁄2 cup half and half)

  • 1 teaspoon vinegar or 1 tablespoon yogurt

  • 1 egg, beaten

Directions

  • Preheat the oven to 425.
  • In a mixing bowl, combine the flour, sugar, baking powder, baking soda, chili powder and salt.
  • Add the butter and mix using a pastry cutter or two knives, until the pieces are pea-sized.
  • Mix the egg, milk and vinegar or yogurt and add to the dry ingredients, stir until just mixed.
  • Add the cheese and stir until just mixed.
  • With cold hands, form the dough into a ball.
  • Lightly flour a piece of parchment paper, place the dough on the paper, and lightly sprinkle flour on the top of the dough. Add a second piece of parchment paper to the top and roll out the dough until it is 1 – 1 1⁄4 inches thick.
  • Cut the dough into eight pieces, like a piece of pizza or cut with a round biscuit cutter.
  • Place a Silpat on a baking sheet, or lightly grease the baking sheet with vegetable oil.
  • Place scones on the baking sheet, brush with cream and sprinkle with sugar.
  • Cook for 12 – 15 minutes until the edges are golden brown.
