1⁄2 c unsalted butter, softened
3⁄4 c sugar
2 eggs, beaten
2 ripe bananas
1 1⁄2 c all purpose or gluten-free flour
1 t baking soda
1⁄2 t salt
1⁄2 t vanilla (optional)
1⁄2 t cinnamon (optional)
1 c chocolate chips (optional)
2/3 c chopped pecans or walnuts (optional)
1 c dried red cherries (optional)
Directions
- Preheat oven to 350. Butter the bottom of a glass bread pan or small glass baking pan.
- Cream butter and sugar in a stand mixer or food processor, or whip with a rotary beater.
- Add eggs one at a time, scrape sides with a rubber spatula or wooden spoon and mix until fluffy.
- Add bananas and vanilla then mix until incorporated but still slightly lumpy.
- Measure flour, soda, salt, and cinnamon in a two-cup Pyrex measuring cup. Mix well and sift into wet ingredients. Stir until just mixed. Add chocolate chips, nuts and/or cherries.
- Scrape batter into pan and bake 45-55 minutes until golden brown and a toothpick inserted in the center comes out clean. For the gluten-free version, be sure to bake well so the center is not too doughy.

- *Use Bob’s Red Mill 1 to 1 baking flour, white rice flour, or Kathy’s gluten-free flour mix.
