Ingredients

  • 2 ¼ c all purpose or gluten-free flour

  • ¼  t salt

  • 1 T sugar

  • 1 c cold butter (2 sticks)

  • 1 egg

  • 2 t cider vinegar

  • 5 T ice water

Directions

  • Preheat oven to 350. Butter two pie plates.
  • Mix flour, salt, and sugar. Beat egg and add vinegar. 
  • Cut flour mix into butter with a pastry cutter until pea-sized bits. 
  • Gradually add egg and vinegar, and mix gently with a pastry cutter. Then add water and mix to form the dough.
  • Divide in half and form into two balls with cool hands (run cold water over hands as needed).
  • Roll between two pieces of parchment paper until about 2mm thick. 
  • Place in pie plates and crimp or smooth edges as desired. Bake for 10 minutes before filling.

Notes

  • *Use Bob’s Red Mill 1 to 1 baking flour, white rice flour, or Kathy’s gluten-free flour mix.
